INTRODUCTION Mustard oil is a edible oil extracted from mustard seeds. It is dark yellow in color and slightly pungent. It is an ancient oil that is said to be full of many health benefits. Mustard oil is produced by pressing the seeds of mustard plant to produce spicy oil. Mustard and rapeseed is the second major oilseed crop in India. Most oilseeds extracted by using oil expellers. The traditional processing of mustard is crushed without any de-hilling. Mustard contains about 20% by weight of hull portions, which imparts dark colour, high amount of crude fibre (about 70%) in the mustard meal and also dark colour to the oil. Because of these qualities the cake finds very limited use for animal feed purposes. Hence an integrated approach for processing of mustard was developed for obtaining a good quality oil and mustard cake with low content of crude fibre suitable for feed uses.
